When I make a new starter for the first week or 2 I bin most of it daily and top up the small remaining bit this should bubble vigorously as it’s a high ratio food to starter if that makes sense, I’d take out 50 g of starter feed it with 50 water 50 flour leave overnight out somewhere not too cold see how it looks then, you only need a tiny amount to build up pre bake too much and your feed isn’t going very far if that makes sense?

Really nice matcha flavour, soft in the middle. And crispy on the outside, really impressed for a first try.

@busterbenny2001 one thing I was going to ask you, the middle is soft but it was quite dense is that down to kneading?
