Cheers. Last attempt some years ago was a fail due to too much time away from home to look after the starter in the first week or so.

At the m9ment Lildl sourdough is the closest for me for off the shelf and Tesco is not made correctly and sainsbury is good. But I managed one loaf at the last try and that was superb and knocked the rest into touch. I think another 10 days before I can start using my starter.

Well any question just yell I’m no expert but read an awful lot about it and bake most days, I actually own a traditional bakery but my sourdough experiments are for home!

We could do with more traditional around here. There are two non big chain shops but work out of industrial parks, one did sourdough. I tried it and it was just an ordinary batch.

The other shop, sells a local largish bakery produce but the loaves are too big. Waste a lot with them but the bread is good. I only get the sourdough now from lidl, that is until my cunning plan comes to fruition. I hope to get enough for a week done in one go and freeze what is not immediately scoffed. Though that Focaccia looks superb. I still have some elephant garlic left from last years crop.
