Mine were too but not knowing what they were supposed to be like was hard!

Think the matcha may affect the dough going to try my own recipe next time see if can get it lighter, maybe just more proving time!

They should be really light and fluffy inside, so going try kneading with actual mixer next time rather than by hand.

Split and reduced the one sunday. Feeding a higher quantity and they are off again. Will give it it some more time before the first loaves then. Lot more volume coming into the starter some hours after the feed from bubbles.

Sounds good , starter should peak 8 hours after a good feed

This mornings loaves, these were cold retarded in fridge for 48 hours before baking!

why have i not seen this thread before? these loaves look amazing!
Often make soda bread as dont like too much "yeast" bread, I love sourdough bread but as we live in a village its really difficult to get a good one without travelling miles.
This has motivated me to look into starting a starter - have seen a few different methods/recipes on youtube, I think also one with apple (linked to earlier in this thread). What starters do you guys suggest for a novice

I used this one, dead easy with orange juice to help the good bacteria easy to maintain and produces excellent bread!
I’m in lanzarote currently so I’m sure my starter will hate me on return as it’s not been fed !

Will be baking on Monday, any problems just yell I can always send a pot of starter !
