I think the idea is that you can almost replicate the results from an Espresso machine using a fine grind and no waiting around. You need a finer grind to achieve this or you'll have a watery coffee.

I generally use espresso coffee in mine as that is what I have for my machine, so don't want two bags on the go all the time.

He's also got me onto using bottled water (Volvic) which makes a huge difference to your brew, or certainly does here in East Yorks where our water is so hard it has little rocks in it.

Stir for how long? I use this method with a 10 second stir using inverted.

A second or two.. just enough to get things swirling around, nothing more than that.

I started off using it normally, then changed to inverted and now do that. It's mainly out of habit, but also because when done normally I found the coffee started to drop through the filer as soon as the water was added. Does that matter, in the grand scheme of things, as long as you press promptly?

Presumably champions of the non-inverted method would argue the pressure is sufficient for extracting flavour? I'm happy to admit it all seems a bit baffling, despite reading plenty about it between 4am and 6am, when baby Flashy was reluctant to let anyone else sleep.
