13 Month old fore rib of beef that's been hung in a temperature and moisture controlled room.
We had half thinly sliced and this piece as a whole. The flavour is very strong,like hung game.

Damn I’ve had some fruit, done 30 mins crosstrainer then walked 4 miles with kids, veg soup for me!
