13 Month old fore rib of beef that's been hung in a temperature and moisture controlled room.
We had half thinly sliced and this piece as a whole. The flavour is very strong,  like hung game.

Damn I’ve had some fruit, done 30 mins cross  trainer then walked 4 miles with kids, veg soup for me!

Did buy some duck legs to try sous vide confit soon!

Was up for a 40 odd mile bike ride but the weather here has gone downhill

Well done on the exercises you and the kids have done today already

Duck legs sous vide confit ....Yum

Going in @ 53.8°C for 2 hours later this afternoon.

Sobrebarriga steak done for 2 hours at 56℃ in the sous vide in garlic and mild chilli with seasoned chunky chips and sweet peas.
