Also some Chinese places use 'fake' chicken, by fake I mean something that resembles a sponge.

I remember in the 80's you would ask for a chow mein dish and get a lot of beansprouts which i preferred but now you get a lot of noodles, -not good.

Indian shouldn't be samey though, you've only had badly prepared ones.
I would suggest (guess) there's actually far greater varieties of Indian food than Chinese.
Every region of India has it's own huge variety of dishes.

Fajita = Rolled and folded in at one end
Burito = Rolled and folded in at both ends
Enchiladas = Rolled and open at both ends
Taco = Half rolled and open at both ends

With regard to pizza, I've been to Italy a fair bit, different regions too, and the pizzas there are usually pretty 'wet'.
Not unfair to suggest that's the way they should be and our 'dry' versions are wrong.

Yes when I say samey, I am only referring to takeaways not Indian food in general. I've been to Michelin Indian restaurants and the food was fantastic.  Just every takeaway seems generic stodgy and bland to me.

IMO, a good pizza slice can be folded in half and eaten without the entire top layer of cheese and toppings falling off or the pointed end sagging down.

Dominos consistently under-cook their pizza and it drives me insane as I watch my toppings slide off my pizza.  I hate wet pizza.

Don't even get me started on Chicago Deep Pan. That is not pizza, it's a bloody casserole.
