It is actually a fair point. Personally I normally would instantly associate authentic as meaning the best quality. Wahaca is a prime example. Its really the only decent mexican I have had in decades so how could I possibly know how authentic it is to the real thing.
An bonafide 100% authentic mexican meal might be a shock to my system!

People who I know who have been to China tell me I definitely wouldn't want authentic Chinese that much

I have heard it compared to the british fry up. The chinese equivalent to a greasy spoon. While it is definitely chinese food it is not necessarily the best example of what the culture has to offer. An ex girlfriend also told me that the chinese don't really eat rice. Its more a supplemental thing if your still hungry at the end of the meal. Not sure I understand that at all.
Anyone ever been to an Argentinian/Brazilian/insert south american nation of your choice steak restaurant? I have been told the meat is to die for if you can find a decent place.
