its not the simplest but not that complicated but we love bacon and tomato pasta.  Essentially a few rashes of bacon sliced up and a sauce made from a carton of tomatoes with a bit of cheese thrown in.  Lovely meal and definitely one of my favourites and you can add or take away any veg depending what's in stock in the fridge or what you fancy, it was all i could eat when i had glandular fever.

So many to chose from!

Scrambled eggs on toast with some onion and cheese in the eggs always goes down a treat as do blueberry pancakes with maple syrup.

A good BLT or breakfast sandwich (fried eggs, bacon, sausage, ketchup) always hits the spot.

A dish I cooked for the first time last week is rice and beans. Incredibly simple, incredibly tasty and incredibly healthy apparently:

1. Soften a chopped onion and garlic in olive oil over a medium-high heat with some cumin and cayenne pepper (add to your preferred heat).
2. Add a tin of diced tomatoes, half a cup of uncooked rice and a cup of stock (vegetable or chicken), bring to the boil, cover and simmer for 15 mins
3. Add a tin of black beans (drained) and half a cup of frozen corn, cover and leave over a low heat for 5 mins
4. Eat, either straight up with a fork/spoon or get some flour tortillas and cheese and make a wrap...

Dirt cheap and dead nice, I'm actually cooking it tonight!

One of my regulars for a quick and simple lunch is tuna noodles! I get those el cheapo supermarket brand noodles in a packet for about 11p from asda or similar. I boil it up as per instructions, add some spring onion, mixed frozen peppers and some curry powder or paste. Chuck in a tin of tuna and Hey presto a quick and satisfying lunch/snack!
I've been making it for years and even the kids like it! All for less than a quid!
