Another vote for making your own.
You can make them whichever way you want. And yes, just use the mince you already like. No need for fat.
Fat in cooking is in my opinion one of those old wife tales where one couldn’t afford a decent cut, then made up some story that fat is good, and that just lived on over time.
I had a good discussion with our local butchers about it several times. He does tend to send his butchers across Europe to learn about different cuts and ways. For example I wouldn’t want to pay for the weight of fat on a cut. Why pay for something I wouldn’t want to eat
Anyway we are all different in what we like. That is the good thing about making your own burgers as you can make them exactly how you like them.
