I have now got a complete set of Stella Damaske knives.
These are unbelievably sharp and look and feel great.
The RRP start at £50 for the paring and £120 for the chefs.
I paid less than this though.

Forgive the home made knife wall block.

Hah, thread revival!
Got some money for my birthday, decided to get myself some knives.
Ordered a Tojiro DP F-808 (210mm chef's knife) and another 12cm utility knife, along with an acacia end-grain board. These'll be my first proper knives, so I'm unnaturally excited. I'll need to decide on a sharpening method in a couple of months or so, which is probably going to be harder than choosing the knives! The Knife Wizard KE198 looks like a simple newbie solution; as much as I would like to use a set of stones (say, a 1000 and an 8000) realistically I just don't have the time nor patience to learn to use them properly.

I now also regret not buying the Ikea Slitbar damascus knives when they were available... then again I had far less cashflow back then!

Now, just need to wait for the postman...

Nah, a quiet powered knife and hydrofluoric acid would be my choice. Hypothetically speaking, of course.

I have to be careful with what I use - they're Japanese knives so they only have a 15 degree angle on each side. I'll look into that one though, looks pretty similar to the one that Global themselves sell...

You might be okay but yes, worth checking! Personally though, I feel that there are far better knives than Global for the money!
