Hah, thread revival!
Got some money for my birthday, decided to get myself some knives.
Ordered a Tojiro DP F-808 (210mm chef's knife) and another 12cm utility knife, along with an acacia end-grain board. These'll be my first proper knives, so I'm unnaturally excited. I'll need to decide on a sharpening method in a couple of months or so, which is probably going to be harder than choosing the knives! The Knife Wizard KE198 looks like a simple newbie solution; as much as I would like to use a set of stones (say, a 1000 and an 8000) realistically I just don't have the time nor patience to learn to use them properly.
I now also regret not buying the Ikea Slitbar damascus knives when they were available... then again I had far less cashflow back then!
Now, just need to wait for the postman... |
