Minosharp are good enough for keeping edges sharp. Then look to find a local professional sharpener, a lot cheaper than you think. I have a guy that does my globals 1-2 a year for £6 a blade

Hi @sergiup.After a few months, how are you finding those Tojiro knives?Did they match up to initial impressions?

I'm looking for a nice new knife and a few people have mentioned the chefs knife in your picture.

Hi - honestly, sometimes I still avoid using them so that I don't damage them; I ended up giving a few of the old knives a good sharpening and I use them as well.
As far as the Tojiro DP's go, they're honestly great. They're very well sharpened from the box and it seems to keep well, they feel nice in use, and even my mum liked them. The only tiny issue is that the finish is a little rough in places, you may have seen a suggestion to use some fine wet & dry to smooth the handle/blade in some places (not the sharp part obviously); it's a small task and not much of an issue though. If I had to make the decision again, I'd probably still go for them.

Thanks for coming back on this one.Yeah, I read some reports along those lines regarding the fit and finish - but nothing that sounds like a deal breaker.

Has anyone found any info / bought the new Ikea Briljera damascus steel knife set? £75 for a 3-knife set with VG-10 core ain't bad.

interesting indeed - on the look out for a couple of new knifes - probably heading to Ikea later this week - will take a look if I can find them.

If you want a good choice (maybe too much of a choice) there is a catering trade equipment supplier with branches around the country:

I was after a good steel and they had about ten, settled on a Victorinox fine cut steel.

Will be keen to hear what you think; they're not that cheap, but a darn sight cheaper than pretty much any other VG10 'sandwiched' knife set that I can think of.
