When I do them I make sure the plate is not swimming in tom juice. I try to use whole toms in a tin.

It's the floppy texture for me. No meat to them. A proper grilled tomato works best for me

Take it to the next level and use your plate as the frying pan lid, less washing up to do and a lovely warm plate for your fry up

Hunting for scraps and managed 3 potato waffles, 3 ghost chilli sausages, 3 smoked bacon and 2 blue eggs.
Not as dry as it looks and wasn't that bad.
