I don't think I'd particularly change my driving speed, so around 70-80mph depending on what mood I'm in with the occasional higher speed if I deem it safe enough.

I still wouldn’t do 120mphto see how fast my car can go. There is no limit other than the conditions and vehicle allowing. To me that is simply natural but then again I grew up with no limits on certain motorways.

Pending conditions around me, my car is just as stable at 150mph on the right motorway, whilst when I’ve been in a smart car 100kph felt enough.

It's down to conditions and that includes other drivers:-

As you say the vast majority of our motorways are not really up to the job of going that much faster than the speed limit.The toll road though is a much better example and much more like the decent French motorways.

In regards to mpg, i got 440 miles to the tank at 130-150mph.

Slightly better than my usual commute to work!
