I am in the process of converting two TV screens into digital menus. Im still sorting out the varied options for what software to use. I would prefer something that could seamlessly play video on a loop in a PIP style, or in the background with an overlay of menu items imposed over it. If anyone has suggestions I'm all ears.

But my question really lies in the execution of hardware connectivity. My current plan is to use a desktop PC as the hub, and I will need at minimum 1 monitor at the PC, and 2 TV monitors used as my menus. So the displays total. What wireless options would work? Can you Chromecast two different things to separate TVs?

Any help or suggestions would be appreciated, thank you.

Presumably a menu in the sense of a restaurant menu rather than something interactive?

Do you need real time control over the contents from the desktop PC? I'd be more inclined to hook them up to their own cheap computers - a Pi Zero or similar. You can always remote in from the desktop if you need to change anything.

considering this is nearly a month old thread and it looks like the OP has not returned i might be wasting my time but i'l post anyway

a couple of questions to start
is the same video going to be shown on the two tv monitors ?
i will presume the answer is yes
is the footage live and a menu overlaid onto the live footage ?
i'l presume the answer is no or it gets a lot more complicated involving video overlay etc

first of all the footage has to be created, the software that can do this quite nicely is Photodex proshow studio ( or gold but studio is more versatile )
the learning curve to use the software is pretty straight forward and can create just what you need to do with very little fuss. it will also render out the footage up to 4K if needed

once you have the footage it's just a case of getting it to the tv screens which can be done in a number of ways but to keep things cheap one of the many android tv boxes ( also know as Kodi boxes ) will do the job nicely with an HDMI splitter / distributor  to feed both tv's / monitors

most of the android tv boxes have SD / Micro SD card readers built in as well as USB inputs which gives you a handy medium to store and present your footage and there's plenty of media playback software to use in order to play the footage

using SD cards or USB pen drives means you can re edit / change the footage as often as you like via a PC in the comfort of your own home or onsite depending which is more convenient
