Hi,
I know this sounds stupid but I wanna ask if it is possible to carry signal from 4 LNBs (one LNB signal on each shielded pair of cat7 wires)
For 30 meters.

Highly unlikely. LNBs operate in the 950Mhz to 2.4GHz output range, so you would need each pair to be able to handle this and not to interact with the other pairs. To do this, you would need each pair to operate in balanced line configuration - as this is what allows the long distance, low interaction within networks. Your LNB would therefore need to have a balanced output - normally via a balun or transformer, yet still be able to receive the signalling voltages from the receiver. I am not aware of any off the shelf equipment that would allow this in the domestic market - or commercially either.

Is there also a potential issue with sat TV in that the feed cable carries a DC voltage from the receiver to the LNB to flip something like the polarisation or frequency range (I forget which) so you'd need to organise that too...?

You could take a look at an optical (fibre) solution there are a number of products available that will allow you to do what you are trying to achieve however the cost will not be small as these will be commercial, Televes make such products.
