i've been changing my homemade protein bars over the month or so - making muffins / cup cakes with them with various success - as normally by the friday they get too hard and dry (I made a batch of a sunday night) - the best one seemed to be the first one - as this didn't contain flower and was still moist...
but last night i made some biscuits that contained 5 scoops protein powder - 3/4 tub of crunchy peanut butter (the bog standard co-op sized one @340g), oats (over half cup?), plain choc chips, sultanas, cinnamon, flax seeds, 2-3 tablespoons honey, 2 eggs, 1 heaped tablespoon of melted coconut oil, pinch of baking soda and salt (tho, not sure they're really needed - just some recipes i saw used them) and mixed all together - and i needed a few drops of milk to make it more gooey - and made 10 biscuits / cookies...
just had 2 now and they're lush... |
