Help me remove rear bench seats and side panel

Hi all.
I have had this MK6 2011 golf for a year now and I think the previous owner allowed wet dogs in the boot as it grew mold into the bottom panel which I have cleaned up, but the smell still exists like a bad tempered ghost.

I have bought a professional carpet cleaner and steamer for the interior and going to give it a massive clean when the weather gets better.

Anyway, I first want to remove the rear seats but there is a bolt which I have not seen before, is it a hex bit? There is a wire hanging onto the seats so they cant just click out which is a pain.

Also the rear passenger cloth panel needs to be removed cleaned underneath and put back, is this hard for a noobie? I cant imagine it would be that hard looking at it.
This was full of mold which is cleaned on the outside, but need to get underneath.

Anyone help me with these 2 points? Thanks for your friendly advice.

How big is it - might this be what you need - hopefully there's a cheaper option.

When you say "a wire" are there any occupancy sensors or airbags associated with the rear seat?
I random tug on it might cause you problems with the airbag system.
Our old Mini had a tug on the passenger seat sensor wire which required a trip to the dealer to reset they system. So you might want to consider disconnecting the battery before you start mucking about in there?

I'd probably try a dedicated forum - I used to read the MkV one associated with this, there may be better places.

The wire is only attached to the seat, its attached to the Torx bolt and on the seat.
My rear seats dont have any airbags, it only has curtain on the sides and this wire is in no way attached to anything but the seats.

Anyone know about removing that side panel, do I need to take off all the top plastic, or will it just pull out?

Will actually get my mate to remove all the seats and side panels and will bring it home and carpet clean it then bring it back to install it.
May cost 100.00 or so, but better than me to mess it up
