I've added slightly more iced water to make sure the turkey is covered. The food grade bucket I bought is fantastic as it has a tap on the side near the bottom edge so I can drain and top up with ice.

We're having Christmas Stuffed Porchetta tonight, with mash, roasted carrots and gravy. The stuffing in the pork is bramley apple and spice. I'm hoping for good crackling, having scalded the fat with boiling water and then seasoned it well with sea salt.
