Pickles
Day off today and had a load of chilies plus some 2/3 of a red cabbage left so thought I would pickle it all.Did a couple of different pickling liquids
Red cabbage has malt vinegar, cinnamon, star anise, black peppercorns, coriander seeds, cumin seeds and bay leaves.
Chilies have cider and white wine vinegar, coriander seeds, cumin, black pepper and bay leaves.
Will look forward to tucking into these in about a month. looks good mate. We went silly last year on pickles and chutney overdrive but just pickled shallots this year . Pickled red cabbage is lovely.

Chillis are always reduced in supermarkets at the moment so collected a few packs and knocked up this chilli jam this morning recipe called for 8 chilliest I think I slipped and added 30!

I keep buying Hayward’s hot n spicy onions, so need to make my own soon never done pickled onions so something else to learn. Thats looks good. Do you have a recipe??
Gonna have a load of chillies ripening soon. Yes mate adapted this one a little but I can say it’s beautiful!
Sweet chilli jam
Used about 6 peppers, 2 medium onions, upped the garlic and tripled the chillies
Took a little longer than the recipe said to get to required consistency but worked lovely, don’t blitz peppers or onions too long do in small batches to avoid over liquid.
