I use the Thai Taste packs of red curry paste - very nice and a pretty good substitute. It's reasonably straightforward making your own but I've found they generally taste very similar.

In fact, after being to Thailand the Thai Taste ones are pretty authentic...although not nearly as hot but that's easy to rectify

Oh and although chicken is good I highly recommend duck or even scallops (though they can be overpowered a bit and might work better in a yellow curry).

"Mae Ploy" is an authentic Thai brand which is very good. You should be able to get this in most Oriental food stores. I've even seen small tubs in some of the larger Tesco stores. The Mae Ploy Massaman curry paste is also very good.

Sorry it's a bit late in the day for your dinner party, but there's always tomorrow.

I use their Green one so I'll look out for the Red , what's Massaman?

Massaman is a brown curry, usually made with nuts and small potatoes. It's more representative of southern Thai cooking as is perhaps more like a Malaysian curry. It's great served with a sour spirit vinegar/cucumber/onion drizzle. Mmmm...

As well as the green curry, Mae Ploy also make yellow curry (geng luang) and sour curry (geng jeurt) pastes. We usually keep at least 3 of these in the fridge and some tins of coconut milk, so a nice curry is never far away.

I just use Sharwoods Green and Red sauces.  Just bung in some chicken with red peppers for red sauce or green beans for the green Thai sauce.  A bit of coriander is nice too.   Use Jasmine rice.

Well, other than the Mrs getting Sainsbury's Taste The Difference red curry paste, everything went to plan and it was extremely tasty.  I ended up putting peppers, courgettes, green beans and some extra spices in.  I made enough for lunch today too   Thank you to all that helped.

I'll definitely be trying some more experimentation with other Thai recipes.
