Trying to book a week away and watching the price fluctuate +/-10% daily

Last night a week at a 5* AI somewhere nice and warm was £1180.00 in total, today same website it's £1300.

Cookies deleted, private browser enabled etc....all other variables remain the same, what's the secret?

Exchange rate? Supply and demand? It is a black art trying to get the best price.

Booked it now...may resist seeing if it's dropped today

Private browsing is more about stopping other users of your PC/tablet seeing what you've done than allowing the third party to track you.

The biggest identifier of a return visitor is a cookie however the second best one is your IP address of which none of the items you've mentioned would change. Combine IP with other basics like browser version etc and you can be fairly confident if someone is a return visitor or not.

That said, there are so many reasons why prices move that trying to guess if its because they've seen you're a return visitor is fairly poinless.
