I think it's sorted. Reset my stick and paired it and then quit to terminal and did this:

sudo nano /etc/udev/rules.d/10-local.rules

I then added this line

SUBSYSTEM=="input", ATTRS{name}=="8Bitdo SFC30 GamePad Joystick", MODE="0666", ENV{ID_INPUT_JOYSTICK}="1"

It now appears to work fine data:image/gif;base64,R0lGODlhAQABAIAAAAAAAP///yH5BAEAAAAALAAAAAABAAEAAAIBRAA7

Stick fixed and I clocked the punisher and Donpachi last night.

Thanks for the recording your experiences here Addyb mate, I've been looking into a Rasberry Pi 3 retropie solution ever since I saw the mame overlays, bezel art and scanlines. Have you had a look into these options yet? From what I've seen the raspberry Pi 3 should handle a lot of options without slowdown but I'm reluctant to invest without making sure it can handle everything from N64 and older . . .

I've seen the videos of the overlays and attract mode as well which looks brilliant. Not tried them yet. Had arcade stick woes yesterday and now it's working I just want to enjoy some games for a few days before I do the next tweak which will be those overlays.
I had a bit of a mess with video shaders tonight and found a really good CRT one that so far suits the megadrive games down to a tee. Over the weekend I will probably try the overlays out.

I heard n64 is hit n miss, I wonder if I'll ever recreate a flawless 4 player Mariokart 64 experience via emulators?

Where or how did you learn to make the edits to fix the lag on your arcade stick? Did you go for the Sanwa button option or regular? I'll probably just use 2 x PS3 controllers via bluetooth I think . . .

It's the Sanwa edition. There was only a tenner difference between the two.

The stick fix was down to various googling. I was struggling to find anything and then I came across that script thats supposed to help. It was literally the last throw of the dice before I sent it back.

I'll try some n64 games over the weekend. I'm interested to see how MK64, Diddy Kong and mario64 handle.
