I’d agree about eating the same thing every day for the whole week. Maybe do something I. Sunday night for mom/tue/wed and something wed night for thur and fri. tinned soup is great, or the fresh soups in the chilled isle, couple of mins in the micro. you don't have to have bread with it i guess
i've been doing falafel wraps on a sunday night and can get a couple of days worth out of them
i'd sometimes do a pasta salad or whatever but again it's normally only for mon and tue.
the microwave rice bags are great and you can throw whatever you want with them

look for opportunities when making the dinner to make extra for a lunch

Get a bulk load of boneless thighs, marinade in different flavours Chinese’s spices, tandoori etc,fridge some freeze some add to your pasta or rice or just salad maybe a dressing, cold sausages are good, I’d cook some extra off while doing dinner and use them the next day?

I usually make a large batch of chilli-con-carne on a Sunday and this makes around 9 takeaway containers worth with each one containing 3 serving spoons of rice, 2 ladles of chilli and a few shavings of cheese.
3 Go in the fridge and the rest in the freezer and come Wednesday the other two are placed in the fridge for the rest of the week.
This is not all I take (fruit and yogurt) but is the main bulk and works very well for me and is easy to make and sort for the week.

Is pastry OK if so why not quiche? Bacon and eggs, yum. If you have a freeer you could always portion them and freeze the portions, take one out every night for the next day then they should stay fresh.

There are plenty of nice meals that can be batched cooked and frozen. As mentioned, chilli, but also spag Bol, lasagne, a multitude of Chinese style rice dishes, same for Indian dishes, jambalaya, any concoction of pasta dishes. Your choice is endless if you’re happy to put the effort in.
