Maldives also looks amazing, but above the budget I think. Albeit it’s my 50th, I wouldn’t expect Mrs W to spend that much. Cyprus usually costs us £3K plus spends, so something similar I think.
I’ve been looking quite a bit into Dubai, just not sure yet though. Anyone’s with experience of Dubai? Places to go/avoid? Eat in or dine out? Costs whilst there? Things to do/see?

Dubai is supposed to be good for a weekend. Remember it is just a big city in a desert.
Yes some of the architecture is amazing, but I personally could not spend a week in Dubai.
I would look at Vegas. Yes, it is also a big city in the dessert, but you can drink and gamble. The Grand Canyon is not too far away as well as a few national parks nearby (Yosemite is around a 6 hour drive).
If you have the budget, you could do a week in Vegas, then hire a camper van (RV) and do a week in the national parks, or a few days in LA

Paphos in another country...How about Playa Blanca on Lanzarote?
And yes on Mauritius there is plenty to see and do outside the resorts. I’ve stayed at Le Toussrok and hired a car as well to explore the rest of the island. The resort itself was really nice with its own private island as well. And you can also visit the associated resorts.
Another destination that could be nice is. Curaçao.

I have. Doesn’t really do it for me personally. But could be ok as a base. I prefer smaller towns.

Passed through St Pete's a few times but never stayed there so can't comment. Stayed at Clearwater the first time in FL but prefer the gulf coast near Indian Rocks. Not a lot there but a nice base.

Edit: Just noticed the water park. That wasn't there when we last stayed. Lost some it's appeal imo.
